The Perfect Valentine’s Day Recipe

Whether or not you have a valentine on February 14, these raspberry bars, imagined by Micheal Schlow, are the perfect sweet treats to spread love. Make and share them with your friends, family, and/or a special someone to let them know how much they mean to you.
Ingredients:
- ¾ cup of softened butter
- ½ cup granulated sugar
- 1 ¾ cups flour
- ⅓ cup chopped pecans
- ¼ teaspoon almond extract
- ¼ teaspoon salt
- 1 cup seedless raspberry jam
- ½ cup sweetened and flaked coconut
1. To start off this recipe, preheat your oven to 350°F and get out a 9x13-inch baking dish (do not grease or spray the dish).
2. In a mixer with the paddle attachment, beat the butter and sugar together at medium speed. Once mixed add the flour and combine well. Add chopped pecans, salt, and almond extract until the mixture has the texture of coarse crumbs.
3. Reserve one cup of the mixture for later. Press the rest of the mixture into the ungreased 9x13-inch baking dish until even and packed tightly.
4. Spread raspberry jam over the flour mixture (I recommend weighing the jam out in ounces on a scale for a more accurate measurement. Otherwise use one cup).
5. Sprinkle the rest of the flour mixture over the top of the jam along with the coconut flakes.
6. Bake for 25-30 minutes until the top is partially golden brown.
7. Let cool completely before cutting into squares, or whatever other shape you desire.
